Our Coffee comes from Papachay, a local roaster in San Carlos. Max, the owner of Papachay roasts a special blend just for us. Our beautiful, shade grown, high altitude Peruvian beans are roasted until just after the first crack of the bean. Before it has a chance to become too dark or oily, but just enough to release the nutty chocolate flavor.
We alternate our drip coffee with the Papachay Peruvian roast, and an Ethiopian Yrgacheffe. Both are a medium to bold roast. Just before a dark roast, and we think they are both equally delicious.
